Recipe for 15:1 for two mugs. 40g grounds. 600g water. Aim for adding water as 120g-200g-remainder. Use a kitchen scale. Boiling hot water is best.
- Rinse filter with hot water and discard
- Grounds in filter, rough centered pile
- Wet all the grounds evenly with as little water as possible. Around 2-3 times mass of grounds
- Let it drain and collapse. Longer the better about 2 minutes
- Add 1/3 of the remaining water, evenly to grounds. Wet the edges too. Grounds should be flat.
- Let it drain until a trickle
- Add the remaining water. Gently swirl the pour over to loosen grounds stuck to walls. Let it drain to a trickle.
- Swirl the coffee
- Enjoy
